Sweet Potatoes with Cilantro

  1. Heat oven to 400°
  2. Place the paprika, sugar and 1/3 cup of oil in a large bowl
  3. Season with salt and pepper and stir to combine.
  4. Add the sweet potato and stir well to coat.
  5. Spread over the tray in an even layer and roast, tossing the sweet potato halfway through cooking, for 25-30 minutes, until golden and tender.
  6. Remove from the oven and cool slightly.
  7. Place the cilantro, garlic, vinegar, and remaining oil in a small bowl, season with salt and pepper and stir to combine.
  8. Transfer the sweet potato to a serving plate and drizzle with the chili sauce. Spoon over the cilantro salsa and sesame seeds

  • 1 bunch cilantro
  • 3 garlic cloves, crushed
  • 2 teaspoons rice wine vinegar
  • 2 teaspoons hot chili sauce
  • 1 teaspoon black sesame seeds
  • 1 tablespoon white sesame seeds
