- Heat oven to 400°
- Place the paprika, sugar and 1/3 cup of oil in a large bowl
- Season with salt and pepper and stir to combine.
- Add the sweet potato and stir well to coat.
- Spread over the tray in an even layer and roast, tossing the sweet potato halfway through cooking, for 25-30 minutes, until golden and tender.
- Remove from the oven and cool slightly.
- Place the cilantro, garlic, vinegar, and remaining oil in a small bowl, season with salt and pepper and stir to combine.
- Transfer the sweet potato to a serving plate and drizzle with the chili sauce. Spoon over the cilantro salsa and sesame seeds
